Colombaio di Cencio - Bianco - 2021

Colombaio di Cencio is a certified-organic Chianti Classico estate in Gaiole, backed by Eataly founder Oscar Farinetti, and this is its white. The 2021 Colombaio Bianco blends 40 percent Trebbiano and 40 percent Malvasia with Chardonnay, Sauvignon Blanc, and Pinot Bianco, and starts with a short skin maceration that gives it grip and a spicy varietal edge. James Suckling scored it 91. Tuscany is red wine country, which is exactly why this white sneaks up on people.

Jasmine, lemon, daffodil, white apricot, and pear. Medium-bodied and bright, white fruit wrapped in floral notes, light phenolic grip from the skins, clean finish.

Panzanella, white beans with tuna, roast chicken with herbs, fried artichokes.

The estate farms 25 hectares of organic vineyards at 280 to 480 meters in Gaiole in Chianti, surrounded by 80 hectares of forest and split into three crus: Cornia, Montelodoli, and Vinci. Winemaker Marcello Burgio keeps the cellar work traditional and light-handed.
