Winemaker Benoit Touquette has more than two dozen 100-point wines on his resume; Teeter-Totter is his everyday Napa project, and the craftsmanship carries over. All Napa Valley fruit, a sane 13.3% alcohol, and oak used like seasoning instead of syrup. Cult-wine hands at a Tuesday-night price — this is the Chardonnay to pour for anyone convinced that Napa whites all taste like buttered popcorn.

Pale gold, with golden apple, lemon curd and grilled pineapple over brioche and roasted hazelnut. The palate is creamy but tuned tight, vanilla bean and baking spice folded in rather than troweled on.

Classic matches for Chardonnay: Roast chicken, lobster or crab with butter, corn dishes, soft creamy cheeses.
