REX HILL sources 100% Willamette Valley fruit and farms all of its estate vineyards biodynamically. The 2021 Seven Soils Chardonnay is the house white: bright orchard fruit, real acidity, a saline mineral line, and just enough oak for toast without weight. Wine Enthusiast found tropical fruit and a creamy texture. The winery calls it sunshine in a glass. Oregon Chardonnay is the smart buy in American white right now, and this bottle makes the argument.

Fuji apple, Asian pear, meadow flowers and dried herbs. Vibrant acidity with leafy citrus, a saline mineral streak, light toast and cinnamon from oak. Tidy finish.

Dungeness crab if you can get it, roast chicken, buttery seared scallops.
