Riva de la Rosa makes this Gavi DOCG from Cortese grapes grown in the Terre del Gavi hills of Piedmont's Alessandria province, close enough to the Ligurian Sea to catch its cooling breeze. Fermentation happens in stainless steel at a controlled 62-65°F, which keeps the fruit precise rather than heavy. Green apple, pear and a touch of almond carry through a crisp, mineral palate. This is the bottle for people who want an Italian white without ordering the same Pinot Grigio again. Serve it as cold as you'd serve Champagne.
