Roberto Crosio farms Erbaluce in Caluso, in the Canavese hills of northern Piedmont, where his cantina has grown the grape on traditional pergolas since its earliest days. Erbalüs is his 100 percent Erbaluce, organically grown, imported by Piedmont Wine Imports. Erbaluce is Piedmont's great underdog white: bracing acidity, mineral spine, built for the table. Small family producer, tiny production, real character. If you like Alpine whites or good Chablis, this is your next bottle.

Citrus and wild herbs, sage and yellow flowers. Fresh and sapid on the palate with a firm mineral streak, mouthwatering acidity, and a clean, saline finish.

Lake fish or trout, fritto misto, lemony risotto, fresh goat cheese.

Cantine Crosio sits in the Canavese hills near Caluso, run by Roberto Crosio. Erbaluce di Caluso is the house flagship, trained on the traditional local pergola system, and the Erbalüs bottling is certified organic.
