Sandhi is the Sta. Rita Hills project that sommelier Rajat Parr founded with winemaker Sashi Moorman in 2010, and this appellation Chardonnay is the best way in. Burgundy is the blueprint: a blend of select cool-climate Sta. Rita Hills vineyards, raised about a year in oak and then another five to six months in steel. It drinks taut, stony, and saline, nothing like butter-bomb California. At thirty dollars it embarrasses white Burgundies costing twice as much.
Lemon pith and citrus flesh, wet stone, white flowers, and subtle sweet spice. Tense and finely cut, with saline minerality and a long, layered finish.
Classic matches for a red like this: Grilled and roasted meats, hearty pastas, aged cheeses.
Parr ran wine for the Michael Mina restaurant group before turning winemaker. Sandhi stays small on purpose, drawing from select vineyards in the Sta. Rita Hills, where relentless Pacific wind keeps Chardonnay taut and acid-driven.
