Shannon Ridge farms high on the rim of Lake County, up to 2,300 feet, on volcanic soil above Clear Lake. Their Chardonnay is the High Elevation bottling, blended from three appellations: High Valley for citrus and acid, Red Hills for ripe fruit, Big Valley for a green mineral edge. Three months on the lees after fermentation gives it weight without killing the freshness. A crowd Chardonnay that still tastes like somewhere.

Pear, green apple, melon and citrus, with lightly toasted oak, coconut and caramel behind. Creamy mouthfeel from the lees work, bright fruit held on through a long juicy finish.

Classic matches for Chardonnay: Roast chicken, lobster or crab with butter, corn dishes, soft creamy cheeses.

Clay Shannon runs close to a thousand sheep through the vineyards instead of herbicide, a program the winery calls Project Ovis. Ovis is Latin for sheep. It cut mowing passes way down and earned them a California Green Medal for environment in 2021.
