The Hilt Radian Chardonnay 2021 750ml

Matt Dees farms Radian on the wild western edge of the Sta. Rita Hills, 13 unobstructed miles from the Pacific, on ridges of diatomaceous earth so hard he drilled holes to plant vines. Barely six of the vineyard's hundred acres carry Chardonnay, which makes this bottling genuinely scarce. The cool 2021 vintage went 85 percent neutral French oak and 15 percent stainless, so the site does the talking. Electric acidity is the signature. One of California's great coastal Chardonnays.

Honeysuckle, lemon curd, white truffle and lavender honey over a shortbread note. Taut and saline on the palate. Laser acidity and a long mineral finish.

Raw bar wine. Oysters and cracked crab first, roast chicken with lemon and thyme second.

Radian is one of The Hilt's two estate vineyards at the AVA's southwestern corner: just over 100 acres, mostly Pinot Noir, with 6.1 acres of Chardonnay on rocky, diatomaceous soils battered by ocean wind. Matt Dees runs everything from vine to bottle.
