The Reserve Brut is Bailly Lapierre's flagship Cremant de Bourgogne, blended from Chardonnay, Pinot Noir, Aligote, and Gamay grown by the cooperative's hundreds of member growers around Saint-Bris, just south of Chablis. It ages in cellars carved 50 meters down into a medieval stone quarry, traditional method all the way. Red apple, lemon blossom, and crushed biscuit riding a creamy mousse. This is the house bubble move: real Burgundy sparkle for weddings, toasts, and Tuesday oysters.
