Côte des Bar Champagne, where Pinot Noir rules. Devaux builds this rosé on 80 percent Pinot from those southern hillsides with 20 percent Chardonnay for lift. The pink comes honestly, a measure of still red wine plus a small saignée portion, and the blend carries 20 to 25 percent reserve wines with at least three years on the lees. Salmon-gold, red-fruited and genuinely dry. Date night bubbles that outclass the price.

Golden salmon pink. Raspberry and wild strawberry with a faint minty edge. Fresh attack, round Pinot mid-palate, wildflower and white fruit notes, dry finish.

Devaux is the leading house of the Côte des Bar in southern Champagne, based at Bar-sur-Seine. The rosé blends estate-district Pinot Noir with Chardonnay from Vitry, Montgueux and the Côte des Blancs, aged in dark, temperature-stable cellars.
