Billecart-Salmon's benchmark Brut Réserve, the wine that built the house's reputation, from the family founded in 1818 in Mareuil-sur-Aÿ and still run by the seventh generation under Mathieu Roland-Billecart. The blend leans on reserve wines dating back to 2006, giving real depth to a non-vintage bottling, finished with a lean 3 g/L dosage. Fruit comes from 40 crus across roughly 300 hectares within 20km of Épernay. This is the every-occasion Champagne, precise and dry rather than sweet and showy, the one to always have on hand.

Raspberry, gingerbread, toast and honey on the nose. Orchard fruit, lime, white flowers and white pepper on a silky, creamy palate with fine, persistent bubbles and a dry finish.

Oysters, fine charcuterie, or fried chicken for the classic high-low move.

Billecart-Salmon was founded in 1818 by newlyweds Nicolas François Billecart and Elisabeth Salmon in Mareuil-sur-Aÿ. The house pioneered cold, slow fermentation in stainless steel in the 1950s to preserve fruit purity, and still sources across 40 crus near Épernay.
