Billecart-Salmon's Brut Réserve, from the family house in Mareuil-sur-Aÿ founded in 1818, blends roughly 40% Meunier with 30% each Pinot Noir and Chardonnay, leaning hard on reserve wines from many vintages for depth. The style is the whole house in one sentence: precision first, richness second. Apéritif, celebration, Tuesday. It never embarrasses you and it never bores you. Poached pear, redcurrant, white flowers and fresh brioche. Light on its feet yet persistent, with lively acidity, a fine chalky thread and an elegant, well-structured finish.
