Devaux is the house that put the Cote des Bar on the map, working from Bar-sur-Seine in Champagne's Pinot Noir country. Cuvee D is its flagship: Pinot Noir led with Chardonnay, drawn from the plots the house calls the D Selection, blended across vintages and aged a minimum of five years on the lees. That aging buys toast and cream most non-vintage Champagne never reaches. Serious bubbles for a real dinner, not just New Year's.
White blossom and soft spice up front, then toasted brioche and vanilla. Creamy mousse, fresh mandarin and orange-zest acidity, intense and long.
Seared scallops, lobster with butter, duck foie gras, roast capon with morels. It holds up through the main course.
Devaux works from Domaine Villeneuve in Bar-sur-Seine, deep in the Cote des Bar, Champagne's southern Pinot Noir stronghold. Chief winemaker Michel Parisot builds Cuvee D from a strict plot selection, roughly 60 percent Pinot Noir to 40 percent Chardonnay per the importer sheet.
