Billecart Salmon Extra Brut Reserve Champagne

Billecart-Salmon has been family-run in Mareuil-sur-Aÿ since 1818, and the Extra Brut is the house with nothing to hide behind. Zero dosage. The blend draws on all three Champagne grapes, more than half of it reserve wine, and rests around four years on the lees, so the wine lands taut rather than austere. Pour it for the friend who claims everything is too sweet. That friend is about to go quiet.

Lemon peel, green apple, white flowers and chalk, toasted bread underneath from the long lees aging. Bone-dry palate, fine persistent mousse, saline mineral finish that keeps going.

Raw bar territory. Oysters on the half shell, fluke crudo, or potato chips and caviar if the night calls for it.

The Roland-Billecart family still runs the house founded in 1818. Cold settling and cool fermentation are the signature here. The Extra Brut carries 50 to 60 percent reserve wines, ages about 48 months on lees, and takes no sugar at disgorgement.
