Champagne Devaux Brut Grande Reserve

Devaux has been making Champagne since 1846 and is the standard-bearer of the Côte des Bar, the Pinot Noir country at the southern end of the appellation. Grande Réserve runs 70% Pinot Noir with Chardonnay, first-press juice only, aged a minimum of three years on the lees and finished at 9 grams dosage. That extra time shows up as real bakery depth in an entry-level Brut. The smart-money bottle for toasts and Tuesday oysters alike.
Golden in the glass. Floral nose with white peach and apricot. Smooth, mellow palate, ripe orchard fruit over brioche, fine mousse, yellow plum on the finish.
Gougères, fried oysters, triple-crème brie. Travels well to a cold roast chicken picnic.
Founded in Épernay by brothers Jules and Auguste Devaux, the house moved to Bar-sur-Seine in the Côte des Bar in the 1980s, where it works with sustainably farmed Pinot Noir and ages every cuvée at least three years on lees.
