Devaux is the standard-bearer of the Côte des Bar, Champagne's Pinot-loving southern reaches, and the Cuvée D collection is its prestige line. The D Millésimé is made only in years worth declaring, and 2012 was one of Champagne's great modern vintages. Chardonnay and Pinot Noir from the best plots, then a full seven years maturing on the lees before release. All that patience shows. This drinks like a wine, not a party trick. The bottle for anniversaries, and for anyone who claims to only drink vintage Champagne.

Ripe yellow apple, juicy pear and lemon zest over toasted brioche and almond. Crisp citrus on the palate with chalky minerality, a rounded texture from long lees aging, and a dry finish carrying a whisper of honey.

Devaux is based in the Côte des Bar in southern Champagne, and the D collection is built on extended lees aging. The Millésimé bottling is drawn from the house's best plots of Chardonnay and Pinot Noir and rests seven years before disgorgement.
