Il Colombaio di Cencio farms 25 hectares around Gaiole in Chianti, the high heart of Chianti Classico between Siena and Florence. Founded in 1993 by German entrepreneur Werner Ernest Willhelm, the estate joined the Fontanafredda family in 2018 and now farms in organic conversion. The 2019 Riserva, Massi del Colombaio, is pure Sangiovese, hand harvested from three Gaiole sites and aged 24 months in large oak casks. 2019 was a strong Tuscan vintage. Serious Chianti Classico for Sunday ragu money.
Ruby core. Violet, ripe red cherry, plum and sweet spice on the nose. Medium bodied with fine grained tannins, bright Sangiovese acidity and a long, savory finish.
Bistecca alla fiorentina, pappardelle with wild boar ragu, aged pecorino.
The Sangiovese comes from three subzones of Gaiole in Chianti: Cornia, Montelodoli and Vinci. Fermentation runs 15 to 20 days on the skins in temperature controlled stainless steel, then two years in large oak with a portion in tonneaux.
