The benchmark prestige Champagne, made only in years worth declaring. The 2015 is a near-even split of Pinot Noir and Chardonnay, 51 to 49, finished with a low 4.5 grams of dosage so the fruit and chalk do the talking. James Suckling gave it 97 points and it will hold through 2035. This is the bottle for engagements, big anniversaries, and the boss who has everything. Nobody has ever been disappointed to receive one.

Roasted cocoa notes open into jasmine, peony, aniseed, and cardamom. Peach, nectarine, and citrus on a silky, precise palate. Saline chalky finish with real tension.

Oysters on the half shell, caviar with potato chips, butter-poached lobster. Also outstanding with fried chicken, no apologies.

Dom Perignon is Moet's vintage-only prestige cuvee, never blended across harvests. The 2015 drinks beautifully now and is rated to cruise through 2035.
