Vincent Paris farms ten hectares of steep granite in the northern Rhône, Cornas at the core, and his Saint-Joseph Les Côtes might be the smartest buy in the whole lineup. He started in 1997 with vines inherited from his grandfather, and his uncle is Cornas legend Robert Michel. Farming skips insecticides and chemical fertilizer, fermentation runs on native yeasts, and aging happens only in old barrels, no new oak, bottled without filtration. James Suckling gave the 2021 93 points and called the pepper off the scale.
Blueberry, violets, smoke, flint and freshly ground black pepper. Medium-bodied and sleek with crunchy wild blackberry and sour cherry, crisp mineral acidity, supple tannins and a long, refreshing peppery finish.

The domaine spans 10 hectares across Cornas, Saint-Joseph and Crozes-Hermitage on steep granitic slopes, some too sheer to work by machine. Treatments run one to three per year, extraction is gentle, and wines age in barrels two to eight years old so the granite speaks instead of the wood.
