The Fableist is winemakers Andrew Jones and Curt Schalchlin pairing every cuvée with a classic fable, and this Paso Robles Cabernet wears fable number 373 on the label. Fruit comes from organically farmed vineyards, handled with minimal intervention, and the wine ages mostly in neutral barrels with just 12 percent new American oak, so fruit leads. James Suckling gave the 2023 a 93. Big California Cabernet flavor without the Napa markup. Weeknight steak wine that cleans up nice for company.
Blackcurrant, cedar, and vanilla up front with chocolate mint, tobacco leaf, and eucalyptus. Medium-bodied and lush, bright acidity, integrated tannins. Blackberry, licorice, and dark chocolate carry a strong finish.
Grilled ribeye, smash burgers with sharp cheddar, short ribs braised low and slow.
