Borgogno has made wine in Barolo since 1761, one of the oldest cellars in the region, and the house still works the old way: spontaneous fermentations, no selected yeasts, patience. The Dolcetto d'Alba is their everyday red and an iconic example of the grape. Plums, violets, ripe berries, soft tannins, a delicate finish. Dolcetto is what Barolo producers actually drink on a Wednesday. Now you can too. Give it fifteen minutes in the fridge and slice the salami.

Ripe red berries, violets, a hint of almond, subtle earth. Medium-bodied and velvety. Cherry, plum, a touch of spice, refreshing acidity, soft tannins, delicate finish.

Salami and grissini, tajarin with butter and sage, vitello tonnato, pizza night.

Giacomo Borgogno & Figli, founded 1761, is among the most historic wineries in Barolo. The house makes wine traditionally: long spontaneous fermentations in concrete tanks without selected yeasts, and long aging in large Slavonian oak for its top wines.
