La Chapelle is one of the oldest wine estates in Aniane, near Montpellier, and it now belongs to Danielle Vialard and Eric Hosteins. Vialard trained as an oenologist and worked in the Medoc at Chateau Cissac, which shows. This is the varietal Cabernet Sauvignon from their La Chapelle range, bottled as IGP Pays d'Herault. Ripe southern fruit, real structure, Bordeaux discipline. Pull the cork for a steak on a cold night.
Black fruit on the nose, dark and ripe. Full-bodied and powerful across the palate, with grip through the middle. The finish is structured rather than soft, in the ripe style of southern French Cabernet.
Classic matches for Cabernet Sauvignon: Ribeye off the grill, lamb chops, aged cheddar, a rainy night and a good movie.
Vialard and Hosteins travelled the Languedoc in spring 2000 and bought Saint Dominique in the Aniane terroir. Most of the old red vines were beyond saving, so two thirds of the vineyard went back in the ground in 2001. The domaine has taken gold at the Concours de la Vallee de l'Herault.
