Sfursat is Valtellina's answer to Amarone: Nebbiolo, called Chiavennasca here, air-dried for months and fermented to full dryness. The 5 Stelle is Nino Negri's flagship, pulled from estate vineyards above 1,200 feet in the Inferno, Grumello and Valgella subzones, with only a quarter of the crop making the cut. The 2018 is spiced, warm and built like alpine Barolo with a raisin-dark heart. For the Nebbiolo lover who thinks they have tried everything.

Violet, ripe berry and plum jam with cloves, cinnamon, pepper and a streak of tar. Full-bodied and warm, held taut by Nebbiolo acidity, finishing dry, austere and harmonious.

Brasato al vino rosso, pizzoccheri with fontina, aged alpine cheeses. A slow Sunday wine.

Nino Negri farms southeast-facing estate vineyards in Valtellina's Inferno, Grumello and Valgella crus, keeping only the top 25 percent of the crop for 5 Stelle. In 2018 a warm autumn cut the grape-drying short, moving pressing up to November 15.
