Opus One Cabernet Sauvignon 2021 750ml
$456.00
The Napa first-growth. Robert Mondavi and Baron Philippe de Rothschild's Oakville joint venture leans harder on Cabernet Sauvignon than usual in 2021, at 93 percent with Cabernet Franc, Petit Verdot, Malbec and Merlot filling out the blend, all aged 18 months in new French oak. A dry, cool year made small berries and deeply concentrated wine. It drinks beautifully young for Opus, and it will cellar for decades. The bottle that says the news is big.
Crushed cassis, blackberry and black cherry with violet, vanilla and baking spice; a plush, creamy mid-palate on fine-grained tannins, then black tea, licorice and dark chocolate on a long finish.
Classic matches for a red like this: Grilled and roasted meats, hearty pastas, aged cheeses.
2021 brought the second-lowest rainfall in Opus One's history with unusually cool temperatures, a combination that produced tiny berries and rare concentration. Fermented in stainless steel, aged 18 months in new French oak, bottled July 2023.
