Paolo Cottini PaCo Rosso Veronese 2020

Paolo Cottini farms a small family estate in the Valpolicella hills outside Verona, and PaCo is his signature Rosso Veronese IGT. Half Corvina with Corvinone, Rondinella and a 15% shot of Syrah, made in two parts: a portion of the crop dries appassimento-style, then referments together with the fresh-crushed fruit. The 2020 won Gambero Rosso's Tre Bicchieri, the top award in Italy's leading wine guide. Baby Amarone richness without Amarone money. Pour it with anything braised.

Preserved cherry, rosemary, licorice and rum-soaked fruit on the nose. Cherry, plum, cocoa and leather on the palate. Powerful yet round, plush tannins, elegant finish.

Beef braised in red wine, mushroom risotto, aged Monte Veronese cheese.

A family-run azienda agricola in the Valpolicella zone near Verona, brought in by importer La Rosa Selections. Part of each harvest dries on racks before refermenting with the fresh fruit, the old Veronese move behind the wine's depth.
