Paul Hobbs - Cabernet Sauvignon - Coombsville - 2019
$129.99
Paul Hobbs got to Coombsville before most of Napa caught on, and this bottling shows why the cool southeastern corner matters. He calls 2019 a possible standout vintage of the decade after a slow, mild season. The blend is 85 percent Cabernet with Cab Franc, Petit Verdot and Merlot, fermented on native yeasts and aged 20 months in 64 percent new French oak, bottled unfined and unfiltered. Cooler-climate Napa Cab with the volume down and the detail up.
Deep purple. Crushed blueberry, summer savory spice and tobacco leaf. Boysenberry and black fig with rosemary and crushed-rock minerality. Integrated tannins, fresh acidity, tension through a long finish.
Classic matches for Cabernet Sauvignon: Ribeye off the grill, lamb chops, aged cheddar, a rainy night and a good movie.
Fruit comes from several Coombsville sites and exposures, hand-harvested at night October 15 to 28, hand-sorted cold, with a five-day cold soak, 28-day maceration and spontaneous malolactic in barrel.
