The 2020 vintage tested every Napa cellar, and Paul Hobbs answered by declassifying anything that missed his bar. What survived is 100 percent Cabernet Sauvignon, picked early, September 24 to October 1, ahead of the season's worst, then aged 20 months in 71 percent new French oak, unfined and unfiltered. Quantities are genuinely small. Where the 2019 leads with tension, this one leads with lush dark fruit. Wine Enthusiast went 94 points. A conversation piece with substance.
Deep garnet. Crushed blackberry, wild sage and fresh cigar box. Red currant, dark chocolate and boysenberry with dried herbs and vanilla. Supple tannins, fresh acidity, seamless layered mid-palate, long complex finish.
Classic matches for Cabernet Sauvignon: Ribeye off the grill, lamb chops, aged cheddar, a rainy night and a good movie.
Hand-harvested at night from Coombsville sites, native yeast fermentation in small stainless tanks, five-day cold soak, 28-day maceration, spontaneous malolactic in barrel. Lots that did not meet standard in 2020 were simply not bottled.
