Schioppettino is Friuli's own red grape, and Paolo Rodaro grows his at Spessa di Cividale del Friuli in the Friuli Colli Orientali. He dries the clusters in small crates for a week before pressing, appassimento style, then ages the wine two full years in big Slavonian oak casks. That patience turns a peppery mountain grape into something plush. Cherry and cracked pepper, soft edges, 13.5 percent. This is the bottle to hand the regular who claims they have tried everything.
Deep ruby. Black cherry and cracked black pepper with clove, leather, dried herbs, and a dried-fruit richness from the raisined grapes. Soft, round palate, moderate acidity and tannin, long finish.
Sunday roasts, game birds, salumi boards, rich mushroom pasta.
Fruit comes from Rodaro's vineyards at Spessa di Cividale del Friuli in the Friuli Colli Orientali DOP. One hundred percent Schioppettino, dried one week in small boxes before fermentation, malolactic completed, then two years in large Slavonian oak casks.
