Simonnet-Febvre's Les Clos comes from the largest and most prestigious Grand Cru climat in Chablis, a single south-facing slope of Kimmeridgian clay and limestone that turns Chardonnay into something built for the cellar. Vines here run 35 to 40 years old, yields are capped at 54 hl/ha, and the wine ferments 65% in stainless steel and 35% in three-to-five-year-old oak barrels. James Suckling scored the 2023 a 97, Tim Atkin gave it 93. This is the most masculine of Simonnet-Febvre's Grand Crus, buy it for someone patient enough to let it develop.
Flinty tension wrapped around concentrated fresh-pineapple flavor with a salty core. Mineral acidity meets generous, complex tannin structure, running into oyster shell and near-tropical ripeness on a very long finish.
Roast chicken finished in cream and tarragon, or scallops seared hard in brown butter, this wine wants richness to lean into, not a light salad.
Les Clos is the biggest Grand Cru parcel in Chablis, planted on Kimmeridgian clay-limestone on a south/south-west facing slope. Depth of soil gives it consistent quality year to year, though it always needs time, Simonnet-Febvre ages it 15 to 18 months on fine lees before release.
