Stephan Asseo's Paso Robles calling card. Optimus is 100% estate fruit from L'Aventure's vineyard in the Willow Creek District, cropped to a stingy 2.5 tons per acre. The 2021 blends 55% Syrah with 27% Cabernet Sauvignon and 18% Petit Verdot, a pairing Bordeaux rules would never allow, aged 16 months in French oak, half of it new. Power and polish in the same glass. For anyone who loves big reds with actual finesse.

Ripe blackberry, cassis and plum skin with blood orange, anisette and wet stone. Full-bodied and velvety, compact refined tannins, a deep black-fruit core and a spiced, chocolatey finish.

Owner-winemaker Stephan Asseo farms the L'Aventure estate in Paso Robles' Willow Creek District, holding yields to 2.5 tons per acre. Optimus goes through malolactic fermentation in barrel and ages 16 months in 50% new French oak.
