The Paring is the value-priced second label from Jonata and The Hilt, the Santa Barbara County wineries under the same ownership as Screaming Eagle, all sharing winemaker Matt Dees. This Bordeaux-style blend, 60% Cabernet Sauvignon, 15% Cabernet Franc, 15% Merlot, 10% Petit Verdot, is built from young vineyard blocks and lots that don't make the cut for the flagship wines, sourced from Ballard Canyon, Sta. Rita Hills, Santa Maria Valley and trusted Northern California sites. Serious pedigree, everyday price.
Cassis, black plum and mulberry with tobacco, espresso, grilled bread and anise. The palate balances sweet and savory: ripe red fruit, cocoa and licorice framed by dusty tannins, with bright acidity carrying it to a long, precise finish.
Grilled ribeye, braised short ribs, roast lamb, mushroom risotto, or aged cheeses like Comté and Manchego.
Matt Dees, winemaker for Jonata and The Hilt, also crafts The Paring using declassified fruit from those estates plus outside vineyards in Ballard Canyon, Sta. Rita Hills and Santa Maria Valley, Screaming Eagle ownership's more accessible Santa Barbara project.
