Warwick Professor Black Pitch Black, South African Red Wine 2020
$53.00
Warwick is one of Stellenbosch's storied estates, and Pitch Black honors Professor Black, the Stellenbosch University researcher who bred storm-resistant peaches on this land before vines went in. His diary entry about a 'pitch black' South Easter storm named the wine. The 2020 leads with 39% Cabernet Franc, backed by Cabernet Sauvignon, whole-bunch Cinsault, and dashes of Merlot, Petit Verdot and Malbec. Cape red with real perfume and swagger for the money.
Deep purple. Baking spice, dried herbs and purple flowers with cedar and cigar box. Black fruit, eucalyptus and cardamom on a structured, inviting palate.
Grilled lamb chops, boerewors or any braai fare, peppercorn steak.
Everything but the Cinsault is destemmed, fermented on skins for two to three weeks, and aged 16 months in small French oak; the Cinsault ferments whole-bunch and stays in unwooded stainless steel. Professor Black's experimental peach orchards stood on Warwick soil before the vineyards.
