Alain Geoffroy farms out of Beine, just west of the town of Chablis, and this Premier Cru comes off vines thirty to forty-five years old planted in Kimmeridgian limestone with south-facing exposure. No oak touches it. Geoffroy ferments and ages the wine entirely in temperature-controlled tanks so the chalk and the fruit stay front and center. Light gold in the glass, full and round on the palate, with real cellaring potential if you want to tuck a bottle away. Classic, chalky Chablis for people who want oysters done right.
