This is the Champagne sommeliers order when they are paying. Billecart-Salmon's Brut Réserve, from the family house in Mareuil-sur-Aÿ founded in 1818, blends roughly 40% Meunier with 30% each Pinot Noir and Chardonnay, leaning hard on reserve wines from many vintages for depth. The style is the whole house in one sentence: precision first, richness second. Apéritif, celebration, Tuesday. It never embarrasses you and it never bores you.

Poached pear, redcurrant, white flowers and fresh brioche. Light on its feet yet persistent, with lively acidity, a fine chalky thread and an elegant, well-structured finish.

Salty snacks to open, then sushi, roast chicken, or a wedge of triple-crème at the end.

Seven generations of one family have run Billecart-Salmon since 1818. Fruit comes from the Marne heartland: Meunier from the Vallée de la Marne and the slopes south of Epernay, Pinot Noir from the Montagne de Reims, Chardonnay from villages along the Marne.
