Henri Champliau - Cremant de Bourgogne - Brut Rose - NV

Alexandre Graffard founded Henri Champliau in 2016 in Mercurey, in Burgundy's Cote Chalonnaise, and named it for his grandfather. He works as a negociant with no middleman, selecting his grape sources himself. The Brut Rose is 75 percent Pinot Noir with Chardonnay and Gamay, aged 15 months sur latte, with just 3 percent still red wine added for a properly pale pink. Decanter gave it 95 points and a Gold. Champagne moves at half the ticket.
Pink grapefruit and red berries with brioche, hibiscus, and lime zest. Creamy mousse, crisp dry palate, fine mineral texture, elegant saline finish.
Grilled salmon, seared tuna, sushi night. Also brunch, obviously.
Negociant fruit from clay-limestone sites across the Cremant de Bourgogne AOC, vines 10 to 30 years old. Lots are vinified separately in stainless steel, blended, then bottle-aged 15 months. Vegan-friendly fining, 12.5 percent alcohol.
