Cass farms 100 percent estate fruit on the back roads east of Paso Robles, with Rhone grapes as the house specialty. The 2024 Viognier was hand-picked cold in the early morning from late August into September, pressed immediately, then given a slow four-to-six-week cold fermentation entirely in stainless steel. No oak, all perfume. It won Double Gold, 96 points, Best of Class Viognier at the Central Coast Wine Competition. The aromatic white for people bored of Chardonnay.
White peach, crushed honeysuckle, and orange blossom leap from the glass. Pure, intense fruit on the palate, fresh and vivid, with a clean aromatic finish.

Cass grows Syrah, Mourvedre, Grenache, Viognier, Roussanne, and Marsanne along Paso's east-side back roads, with a winery restaurant on site. Everything is estate grown, nothing bought in.
