Dawn Chorus farms an organic vineyard twenty miles from the sea at the foot of limestone hills, picks in the cool of morning just after the dawn birdsong, and ferments naturally with long lees aging. Grapefruit, passionfruit, and golden melon with real minerality and texture. New Zealand Sauvignon with an actual personality. Pour it for a Marlborough loyalist and watch what happens.
Grapefruit and citrus up front, then passionfruit and gold melon. Bright acidity, saline minerality, and a hint of crunchy phenolic grip. Mouth-filling and dangerously drinkable.

The vineyard sits on soils left by an ancient river and, before that, a salt lake formed as New Zealand rose from the sea. Cool climate and low rainfall give moderate sugars and bright acid. Organic farming, natural ferments, extended lees time.
