Henriot's rosé is the assembly method done properly: roughly 60% Pinot Noir, 30% Chardonnay and 10% Meunier, colored with about 10% still red Pinot from a parcel in the grand cru village of Aÿ. Reserve wines and at least three years of cellar aging give it more spine than most pink Champagne. This is not a novelty pour. It is a dinner wine that happens to be beautiful, and it works from apéritif through dessert.
Wild strawberry, redcurrant and orange zest over a chalky base. Dry, vinous and fresh, delicate red fruit through the mid-palate, fine mousse, long gently spiced finish.
Seared tuna, duck breast, prosciutto and melon, or a berry tart to close the night.
The house dates to 1808 and builds this cuvée on its usual precision, blending 20 to 40 percent reserve wines with still red Pinot Noir from the heart of the Aÿ cru. Dosage sits near 7 grams per liter, aging runs at least three years.
