Jaine - Sauvignon Blanc - 2021
$19.99
Jaine is a Washington State producer built around single-vineyard fruit from the Columbia Valley, and their standard Sauvignon Blanc blends grapes from sites like Evergreen, Horse Heaven Hills, Culloden and Spice Cabinet. It's fermented and aged entirely in stainless steel, so nothing gets in the way of the fruit. High-altitude, cool-climate sites keep the acid bright. This is a sharp, mineral-driven Sauv Blanc for people who find California versions too soft.
Lemongrass, kiwi and pink grapefruit up front, with floral and stony mineral notes. Bone-dry on the palate, with mouthwatering acidity and a clean, citrus-driven finish.
Great with a plate of oysters, grilled shrimp, or a goat cheese salad — anything that wants a squeeze of lemon.
Jaine sources this bottling from a handful of Columbia Valley sites, including the high-altitude Evergreen Vineyard, farmed sustainably in a cool microclimate that keeps acidity high and ripening slow. Fermented and aged entirely in stainless steel to protect the aromatics.
