Juvé & Camps Gran Reserva Cava - Brut Nature - 2018

Juvé & Camps Reserva de la Familia is the benchmark Gran Reserva Brut Nature of Cava. The 2018 is organic Xarel-lo, Macabeo, and Parellada, 55-35-10, from the family's Espiells, Mediona, and La Cusconà estates in Penedès, aged at least three years on the lees and finished with zero dosage. Wine Spectator has put Juvé & Camps in its Top 100. Champagne texture at a Cava price. Bone dry, seriously toasty. Stock two, because the first one goes fast.

Ripe white peach and green apple, toasted bread, fennel, and lemon. Creamy, fine mousse, vivid acidity, then salted almond and a steely, yeasty finish.

Oysters, jamón and Manchego, fried chicken, or salty potato chips with dinner-party pretensions.

Fruit comes from the family's own Espiells, Mediona, and La Cusconà estates in Penedès, farmed organically. Traditional method, a minimum of three years aging on the lees, no dosage at disgorgement.
