Laurent-Perrier's Grand Siècle works on a contrarian idea: instead of bottling one great vintage, blend three of them into something no single year could be. Iteration No. 26 is 65 percent 2012, 25 percent 2008 and 10 percent 2007, all grand cru fruit, 58 percent Chardonnay to 42 Pinot Noir. You get 2012's sunny fruit riding on 2008's spine. Gorgeous now, and it will hold in the cellar for decades.

Ripe peach, quince, honeysuckle, lemon and clementine with hazelnut, fresh butter and pastry dough. Medium to full-bodied with a refined mousse and a lacy, chalky texture.
