Mas Fi is traditional-method Cava from the Josep Masachs cellars in Penedès, imported by Winesellers Ltd. The blend is textbook: 40 percent Xarel-lo, 35 percent Macabeo, 25 percent Parellada, aged ten months on the lees for fine bubbles and a little bakery character. It drinks crisp, dry, and clean, the kind of sparkler you open on a Tuesday because the paella turned out well, and the kind you buy by the case for a party without wincing.

Citrus, white flowers, and a touch of tropical fruit and baking spice on the nose. Crisp and dry with green apple, zesty lime, and stone fruit, plus a light creamy lees note on the finish.

Salty things love it: jamón, marcona almonds, fried calamari, potato chips with absolutely anything.
