Palmer & Co - Blanc de Blancs - Champagne

The insider's Blanc de Blancs. Palmer & Co builds this all-Chardonnay Champagne mainly from Trépail and Villers-Marmery, premier cru villages on the Montagne de Reims, rounded out with Côte de Sézanne fruit, then ages it five years on the lees with a restrained 6 to 7 grams of dosage. Crystalline, chalky, quietly serious. It drinks like bottles twice the price from the famous houses. Aperitif hour, the raw bar, or the friend who claims they know Champagne.

Citrus, white flowers and almonds on the nose. Fresh and silky with green apple, white fruit and chalky mineral drive. Fine pinpoint mousse and a medium-long, saline finish.

Classic matches for Champagne: Oysters, fried chicken, potato chips, celebration in any form.

Chardonnay mainly from the premier cru villages of Trépail and Villers-Marmery on the Montagne de Reims, blended with Côte de Sézanne fruit grown on chalk. Five years of lees aging before release.
