Piper-Heidsieck - Cuvee Rare - Brut - Champagne - 2008

Rare is Piper-Heidsieck's prestige cuvée, made only in exceptional years, and 2008 was exactly that in Champagne. The blend runs 70 percent Chardonnay from grand cru sites like Avize and Oger with 30 percent Pinot Noir from Verzy, matured about eight years in the cellars before release. Wine Spectator gave it 97 points. Cristal-level Champagne without the Cristal-level markup, which makes it the quiet smart buy on this shelf.

Cassis, tangerine and toasted brioche with candied ginger, hazelnut, praline and a saline fleur-de-sel edge. Racy, seamless acidity, lacy mousse and a long, creamy finish.

Classic matches for Champagne: Oysters, fried chicken, potato chips, celebration in any form.

The 2008 blends eight crus: Chardonnay from Oger, Villers-Marmery and Avize, Pinot Noir from Verzy, aged over eight years in the Heidsieck cellars before disgorgement.
