Shabo farms the land between the Dniester estuary and the Black Sea outside Odesa, a site Swiss settlers planted as a wine colony in 1822. The Iukuridze family revived the estate in 2003 and has kept it producing through the war. The 2023 Reserve is 100% Saperavi, oak aged, inky, meaty, and structured, everything the great Georgian grape does at its best. A cellar-worthy red and a direct way to back Ukraine's winemakers with your dinner budget.

Deep inky purple. Blackberry, dark plum, licorice, black pepper, smoked meat, dark chocolate, and tobacco leaf. Full bodied, bright acidity, velvety mouth-coating tannins, long smoky finish.

Grilled lamb, slow-braised short ribs, smoked brisket, roasted eggplant with garlic and herbs, or a wedge of aged manchego.

The village of Shabo was founded as a Swiss winegrowing colony in 1822, nationalized by the Soviet government in 1920, and privatized in 2003 when the Iukuridze family bought it and set about rebuilding Ukraine's fine wine industry.
