Taittinger's only single-vineyard Champagne, grown on the south and southwest-facing slopes surrounding Château de la Marquetterie, the house's own château estate. The blend runs 55% Pinot Noir to 45% Chardonnay, first-press juice only, with a portion fermented in oak casks, then five years resting on the lees before release. That adds up to a richer, more vinous pour than standard non-vintage Champagne, all peach, apricot and toasted brioche. Bring it out when the night deserves better than the usual grande marque.

Deep gold with fine, delicate bubbles. Peach and apricot compote on the nose, toasted brioche and vanilla underneath. Full and smooth on the palate, yellow peach leading, with a light, expressive woody note on the finish.

Les Folies is a Taittinger-owned single vineyard with south and southwest exposure. Each plot is vinified separately in small volumes, certain lots in large old oak casks, and only first-pressing juice makes the final blend, which ages five years sur latte.
