The salmon-pink benchmark. Laurent-Perrier has made this cuvée from 100% Pinot Noir since 1968, and it remains the rosé Champagne other houses measure themselves against — Grand Cru fruit from the Montagne de Reims, colored by real skin maceration rather than blending, with structure to match the perfume. Bring it to whoever you most want to impress, pour it at the toast, or skip the middleman and drink it yourself on a Tuesday.

Ripe raspberry, candied citrus, fresh roses and a little flint on the nose, then a vinous, expansive palate with a frothy mousse and real concentration.

Aperitif hour, oysters, seared tuna, a bowl of ripe berries at the end of the night. It also carries a celebration entirely on its own.

Laurent-Perrier has made this cuvée since 1968 from Grand Cru Pinot Noir grown in ten villages around the Montagne de Reims, macerated on its skins for two to three days. A technique most of Champagne still won't attempt.
