Bailly Lapierre, Rose Cremant de Bourgogne

Bailly Lapierre is the Cremant de Bourgogne house of Saint-Bris, a cooperative of winegrowing families founded in 1972 with cellars 50 meters underground in a medieval quarry. That stone built the Pantheon and Notre-Dame de Paris. The Rose Brut is Pinot Noir with Gamay, briefly steeped for color and finished in the traditional method. Rose-gold in the glass, airy mousse, red berries for days. Champagne's neighbor from just south of Chablis. Pour it at brunch or before dinner.

Rose petals, biscuit, sweet almond, and cherry stone on the nose. Strawberry, cranberry, and blood orange on a tender, frothy palate. Dry, soft, endless red-berry finish.

The 12th-century quarry beneath Saint-Bris-le-Vineux supplied stone for the Pantheon, Notre-Dame de Paris, and Chartres, grew mushrooms until 1972, then became four hectares of cellars at a constant 12 degrees Celsius.
