Cap au Large comes from Les Maîtres Vignerons de la Presqu'île de Saint-Tropez, the winegrowers' house on the Saint-Tropez peninsula, bottled under IGP Méditerranée. It is built to be exactly what a summer rosé should be: pale, light, fresh, and fruity, pressed gently to keep only the first juices and fermented cold. The blend leans on Syrah, Grenache, and Cinsault with a supporting cast of southern grapes. Chill it hard and open it outside.

Small red berries on the nose, strawberry and redcurrant. Light, dry, and fresh in the mouth with juicy watermelon, citrus, and peach, closing on a clean, brisk, gently tart finish.

Aperitif hour, Mediterranean salads, a Thai curry or tagine, anything eaten on a porch.

The Maîtres Vignerons rate and select individual parcels with partner cellars, pick at full maturity, then destem, chill the grapes to 8 degrees Celsius, and press gently, keeping only the first juices before cold settling and temperature-controlled fermentation.
