Tai Rosso is Grenache. Same grape as Cannonau and Garnacha, grown in the Colli Berici south of Vicenza on old red clay, traditionally vinified on its own and drunk young. Dal Maso is the family that champions it. Nicola, Anna and Silvia farm 30 hectares across Colli Berici, Gambellara and Lessini Durello, and their Tai Rosso ferments in stainless, then rests in concrete and steel rather than barrel. Fresh raspberry fruit, real balance. Serve it with a chill.

Bright ruby. Cherry, currant and raspberry with violet lift, then a little spice and balsamic as it opens. Medium body, elegant acidity, delicate balanced tannins, a faint almond note in the finish.

Spiced pasta courses and white meat. Roast chicken works, so does anything with chili in the sauce.

The Dal Maso winery sits in Gambellara, with a Palladian-style rotunda extension built in 2002 holding vinification on the ground floor, maturation below and a grape-drying loft on top. They make roughly 350,000 bottles a year.
