Cottanera grows Nerello Mascalese on Etna's north side at 720 to 750 meters, in Contrada Cottanera and Diciassettesalme above Castiglione di Sicilia. The Etna Rosato is 100% Nerello Mascalese, picked by hand in late September, cold-macerated briefly for its pale onion-skin color, fermented cool, and rested on stirred lees in steel. The 2025 lands at a fresh 12.5%, with only 29,000 bottles made. Floral, saline, volcanic to the core. Rose for people who take rose seriously.
Iris, wisteria, rose, and aromatic herbs, with pale strawberry underneath. Rich, deep, and sapid on the palate, lively acidity, and a saline volcanic-mineral finish.
The estate pours it with fish and vegetable tempura, pumpkin risotto, and potato pie. Semi-aged cheeses work too.
Vines average ten years old on lava-alluvial and lava-clay soils at 720 to 750 meters in Contrada Cottanera and Diciassettesalme, Castiglione di Sicilia. Cryomaceration below 4C for four to five hours sets the color, fermentation runs about 20 days at 17C, then steel aging on stirred lees.
